Steak Diane

As seen of Fox2 Weekend on Saturday March 4, 2006

1 6oz. NY Strip Steak

1 teaspoon chopped shallots

1/2 teaspoon chopped garlic

1/4 cup sliced shiitake mushrooms

1 Tbsp scallions sliced on a bias

1 Tbsp roma tomatoes

1 Tbsp Brandy

1/4 cup beef broth

1/8 cup heavy whipping cream

1 Tbsp olive oil

1/4 cup seasoned flour

salt and pepper to taste

Method

1. Cut NY Strip into three 2 oz. pieces and pound thin with a meat mallet

2. Drege meat in seasoned flour

3. In saute pan heat olive oil until just about the smoke point. Saute the strip steak on one side until golden brown. Turn the meat and add shallots, deglaze pan with brandy and add the beef broth and cream

4. Remove the pan and add 1/2 of the scallions and tomatoes. Add salt and pepper to taste. Garnish with remaining scallion and tomatoes. Serve with Rice Pilaf or Mashed Potatoes.
